臨潼火晶柿子，亦稱火水晶，因“果實(shí)微紅似火樣，果面光澤如水晶”而得名，是極受當(dāng)?shù)厝怂矏鄣氖磷悠贩N。陜西柿子樹的栽種范圍十分廣泛，但火晶柿子品質(zhì)最佳，是臨潼特有的柿子品種。它的特點(diǎn)是：個(gè)小，色紅，晶瑩光亮，皮薄無核，果肉蜜甜。

臨潼火晶柿子，摘下時(shí)不能立即食用，需經(jīng)脫澀后方可食之。脫澀的方法有三：一是散放儲(chǔ)存，自然脫澀；二是用火煨烘脫澀；再就是與梨、蘋果等一起堆放脫澀。脫澀后軟化了的柿子即可直接食用，也可加工制成甜食品種，即使是傷殘次果，也可經(jīng)過加工，用于釀醋。

臨潼火晶柿子含糖量高，除鮮食外，可釀酒或做醋，藥用能治腸胃病、止血潤(rùn)便、降血壓，同時(shí)還是良好的滋補(bǔ)品。用臨潼火晶柿子和面粉做成的火晶柿子餅，綿軟香甜，是西安的名小吃。

臨潼火晶柿子每年都大量出口，深受國(guó)內(nèi)外旅游者的贊譽(yù)。

The shiny－red persimmons，which are produced in Lintong，look“as red as fire and as clear as crystal”，hence the name.The persimmons are very good and popular with the local people.Though persimmons are popular in Shaanxi，the Huojing Persimmon，a local product of Lintong，ranks No.1 in quality.With a thin peel and sweet pulp，they are also small，fire red，crystal clear，and seedless.

The shiny－red persimmons cannot be eaten right away.They have first to be depuckerised before eating.There are three ways to depuckerise them：Firstly，lay the persimmons in the open air for natural depuckerization；secondly，dry and warm them by fire to take the puckery taste away；thirdly，put the persimmons together with pears and apples to take away the puckery taste.They can be eaten after being depuckerised and softened.They can also be processed into sweet and dry things，and even the rejects or damaged ones can be used to make vinegar through fermentation.

The persimmons can be used to make wine and vinegar despite their popularity as a fresh fruit.They can also help with stomach problems and constipation，stop bleeding，and lower blood pressure. The pancakes made from the persimmons，soft and tasty，are very popular in Xi'an.

Exported in large quantities，the Lintong Huojing Persimmon enjoys a high reputation both at home and abroad.
